WIAW: Pizza is always a good idea

Hey guys,

How’s your Wednesday going? At least we’re at the half-way point for the week, right? We’ve been fighting a cold for the better part of a week or 2 weeks, really, so I’m hoping that we can shake it soon. Seriously, these Spring colds mixed with Spring-time allergies make for a few really miserable weeks!

Anyway, back to today! I’m linking up with Jenn and the WIAW gang to share all of my eats from Monday, a day that was fairly light on the exercise front, but heavy on good food! I know I told you all a few weeks ago that I was working on some diet tweaks to help me lose a few pounds. Well, I’ve been tracking for about a month now and just seeing the foods that I’m eating written down- macros included- has helped me to make some better decisions that do not involve deprivation. I guess you could say that I’ve been following an iifym approach, but really I’ve just been focusing on eating protein with every meal and snack. It’s really made all the difference and I’m already down a few pounds! 

So, on to the food!

Monday started off with a bowl of blueberry n’oatmeal topped with some cinnamon roll crumbles left over from Sunday. It was also followed by copious amounts of coffee. Because, coffee.

After breakfast, we clean things up, read a few books and then headed to the gym. I was anxious to get back after taking a few days off due to the Easter holiday. I did a little reading elliptical session, before hitting up a BODYFLOW class. After our gym time, Matilda and I ran a few errands before coming home to lunch.

After Matilda went down, my sweet tooth started up, so I dug into the Easter candy for a little treat.

I was really looking to dinner though. Blaze Pizza contacted me last week and invited me the grand opening of one their new locations here in Knoxville. John, Matilda, and I were more than happy to attend!


I loved all of their fresh ingredients. And I thought it was so cool to have caramelized onions and roasted garlic available. Their pizza are fast fired (only 180 seconds!) and come out perfectly crispy.


John went with the barbeque chicken pizza and I had a Create Your Own with ricotta, spinach, caramelized onions, roasted garlic, and artichoke hearts. 


Matilda was obviously a fan!

  1. Ricotta on a pizza! Be still my heart. Pizza bars are such a cool concept- I wish we had one near us. I had a Maddio’s when I lived in Columbia. I always try to convince restaurants to move near me and somehow I am not influential enough?!
    You could say I’m a daily dessert eater, because I at least have chocolate everyday. And I love every bite!
    Sorry about the yucky sickness. Allergies are bad for me right now too. I’m sneezing so much!

  2. Nice choices on the pizza!! You’ve obviously got a talent for pizza making. I’ve never thought of putting on ricotta, though I am still pretty new to the cheese in general. Caramlized onion and roasted garlic though – yes yes yes.
    I’m 100% a daily dessert eater. I literally cannot go to bed without having at least some chocolate. I’m not going to say its a problem.

  3. Hey good job on the healthy eating! I love the Caramilk version of Cadbury creme eggs. I have pretty much been eating them for breakfast lunch and dinner ever since I bought a huge bag of them on sale two days ago. I love mustard too! And that pizza looks killer. I love how Matilda is eating it like she’s in a wrestling match and she’s winning. So cute. 🙂

  4. I love pizza! I just bought some chickpea flour to make your socca pizza… Eventually lol. But seriously my husband has helped me appreciate pizza since we met. Now I love really good chunky marinara sauce. That’s all I need, and good parmigiana regiana.

  5. i love ALL the pizza toppings! Seriously, I’m the person that wants the deluxe pizza or at least one with about a bazillion veggies. And yup, I’m a daily dessert eater, sometimes multiple desserts/day. Love my sweets!!

    My favorite pizza topping is um… sausage or maybe chicken+alfredo. 🙂

    Are you a daily dessert eater?
    Yes, I definitely eat dessert at least once, sometimes twice a day. It's hard not to eat it even when I'm sick.

    What’s the best thing you’ve eaten this week?
    It was probably the first bite of food I had this morning after being sick yesterday. It's amazing how good food tastes after you haven't had it for about 24 hours. O_O

  7. Yes pizza is always a good idea! I have been having more pizza cravings in the last 6 months than any other time in my life! My husband and family aren’t complaining though.
    P.S. I posted a Chocolate Creme Egg Protein Shake last week you might be interested in, Cadbury Creme Eggs were always a favorite of mine growing up.
