WIAW: Anniversary Stay-cation Eats

Hey guys,

Happy Wednesday! I’m going to be honest with you here- I’m so glad this week is half over! It was so nice to John home last week to help me with Matilda and all of our potty training fun. This week has not been so fun. Matilda picked up a cold from somewhere (there’s really no telling where- kids put everything in their mouths!!!) and it has somehow derailed a bit of our potty training progress. One step forward, two steps back? Other moms, is that how it works?? PLEASE TELL ME NO!

Enough complaining though!! Let’s talk about something happy! Like food! I’m linking up with the WIAW crowd to share all of my eats from last Friday- when John and I had our fancy anniversary stay-cation. 

So, Friday morning started out my favorite way. A mug of warm water+lemon juice+ginger, followed by coffee. Lots of coffee.

Followed by a single serving pancake + blobs of almond butter.


When John and I got home from BODYPUMP (I always love it when he gets to take my classes!), we were greeted by this lovely little princess. Nana was getting ready to take her and her cousins to a Disney Live performance and she was so excited!

We quickly whipped up some lunch for the three of us. Big salads are always a good choice.

After lunch, John and I said goodbye to our girl and got ready for our date night away. We booked a night at The Oliver Hotel, a fun boutique hotel here in Knoxville. It’s actually where Elizabeth Gilbert finished writing Eat Pray Love. How cool is that?!

The bed looked so beautiful that I immediately wanted to jump on it. Does anyone else do that? No? Just me? Okay then.




We headed out soon after to see Whisky Tango Foxtrot. Tina Fey played a war correspondent in Afghanistan; it was definitely a different role for her, but it was so good! 


After the movie, we walked over to Knox Mason just down the street for dinner. I think the tea towels as napkins were a nice touch.

Anniversary dinner, belated or not, call for drinks!


I got the chicken breast with corn bread stuffing and spicy sweet potato puree. The presentation was beautiful and it so delicious!

After dinner, we walked over to Coffee + Chocolate. I was too full from dinner to enjoy any chocolate, but we did get some coffee to go so we could stroll through downtown and check out the beautiful sunset.

Beautiful sunseAfter we finished our coffee, we went back to the hotel for drink. The Oliver Hotel has a cool Lounge inside called The Peter Kern Library and it just seemed wrong to be there and NOT take advantage of it.


I ordered The Matilda (HA!!) and it was delicious!


Cheers to such a fun evening with my love! 7 years have gone by so quickly! Here’s to 7×7 more!

  1. I am so glad you guys had a good time! Sweet potato and cornbread stuffed chicken sounds AMAZING. I would love to replicated that but I wouldn’t know where to start.
    We’ll be married two years this May and last year we went hiking, which was really fun! I am hoping we can getaway for a night or two this year.

  2. Wow what a fabulous staycation you had!! The hotel looks and sounds AMAZING, totally like somewhere I’d want to stay. Especially with Elizabeth Gilbert hanging out lol. That’s so cool though! We had our anniversary dinner at the restaurant where we had our official first date. It was even better than before:)

  3. Oh, I was so scared that you stopped blogging! I couldn’t get your site to load for some reason, this last week. I feel bad now, that maybe you thought that I stopped reading it. I need to go back and read the stuff I missed! Happy Anniversary! Our staycation was the best time we’ve ever had. SO COOL that you stayed in the hotel that Gilbert stayed in. I loved that book.

    I hope Matilda feels better soon and that potty training goes well! I think EVERYTHING is two steps forward, one (or five) steps back when it comes to anything kids.

  4. This is soooo wonnderffulll. I could not be happier that you (both) chose to treat yourselves and have a full night of luxury. I think everyone should go on a stay-cation in their own town or somewhere close by at least once a year. Why not? You don’t have to travel miles to treat yourself to new surroundings and all the luxuries of royalty. Plus – comfy beds (totally first thing I do) and no dishes! Grabbing a coffee and having an evening stroll… my heart!

  5. I just suggested a similar staycation to my husband for our anniversary this year! Last was our first anniversary and we took a long trip to San Fran, Portland and Seattle. That chicken looks SO GOOD.
