WIAW: It’s Pumpkin Season!

Happy Wednesday!

I have to start out with a huge Whoop! of congratulations to my favorite cousin/best friend Jordan!!

She had baby Izzy last night two weeks early via C-Section! I know it was not the birth that she had planned, but God has his own plans, right? A healthy mama and baby are the most important outcome! I can’t wait to meet my new niece! I just know that she and Matilda will grow up to be great friends, just like their Mamas!

Now, let’s get to some food talk, I know Jordan would approve 😉

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

For this week’s WIAW post, I thought I would show you a day of food from the weekend for a change. A big thanks to Jenn (or Laura or Arman or Meghan) for hosting the link up. New to WIAW? Head over to Jenn’s blog and check out this post to see what it’s all about! 

Sunday started out a bit later for me than normal. I had some trouble sleeping on Saturday night, so John got up with Matilda and they let me sleep till about 8. He really is the best husband ever! #marriedup

I rewarded them for their patience with pancakes. Chocolate Pancakes to be exact.

These were of course consumed along side some iced coffee.

After breakfast, Matilda and I did a little meal prepping for the week while John went outside to wrestle with his car. The starter AND the battery died this weekend. Since we couldn’t really help him, we decided to head out on our favorite 2.1 mile loop. 

It is a gorgeous trail, but man is it hilly! Between Matilda and the stroller, I was pushing 50+ pounds! Talk about a workout!

Fall?

I take all of those fallen leaves as a sign from God that it’s officially okay to bust out the pumpkin!

But, It certainly didn’t feel like Fall with the 90+ degree heat!

We came home hot, tired and more than ready for lunch! Thankfully we had leftover pizza waiting for us. lunch

After lunch, Matilda took a nap while I checked out a fun package that came in the mail.

New Shoes!

I ordered these shoes from Amazon a week or so ago and they finally came! I’ve needed a new pair of athletic shoes for a while and knew I wanted a minimalist style pair. I’ve worn them several times already and LOVE them!

John and I were originally going to go out on Sunday night, but decided to put it off due to unexpected car surprises. Those pesky car surprises always take longer than you think. We opted instead for roasted salmon, broccoli, and sweet potatoes.

 Since it is apparently already Fall, I decided to whip up a Fall-themed dessert. That is code for pumpkin by the way.

I made Arman’s 3 ingredient Pumpkin Fudge, but I just had to go and mess with it. We enjoyed 5 ingredient fudge with the addition of pumpkin pie spice and cacao nibs. 

I ended the night by reading for a bit. Inspired by Kate, I read the 3rd Harry Potter book (My favorite!) before bed.

All in all, it was a pretty great Sunday.

  1. We enjoyed the same evening snack! I am always up for trying a pumpkin recipe out when I see one, especially when it is so incredibly easy!
    I think it decided now that I will move on from the Chamber of Secrets (which has been dragging) and jump right into the 3rd one!
    The new tennis shoes are great- a fitness instructor needs herself some reliable shoes! It definitely doesn’t hurt if they are cute too!

    1. Thank Jessica! I feel like Sunday’s were made for pancakes or waffles if I could ever get my waffle iron to work! Those shoes are loud, but super cute. I really like them.

  2. I havn’t quite busted out the can of pumpkin, but oooooh man am I anticipating when I do. The recipe collections have started their own file. Love summer… sad its gone…. but I think I’m okay with bringing on the fall baking. Your weekend sounds lovely and I’m jealous of such a beautiful hike, even if mother nature was confused between the falling leaves and sweltering heat.

  3. I love this! I can’t wait to push a stroller during my walks and runs. Is that not silly?? Congrats to Jordan that’s soooooooo fantastic!!! I have to get a csection as well when it’s my time because of my back, so I’m always emotional when I read about others. Happy for her and the baby!

      I’m sorry that you have to get a C-Section! That is scary, but I guess it’s a good thing that you know that going in.

  4. Aw congrats to your cousin!! And YESSS to pancake Sunday 🙂 Or waffles or crepes… but usually pancakes. It’s still incredibly hot and humid where I live so I’m having a bit of trouble getting into the pumpkin mind frame haha but as soon as it cools a bit I will be jumping on the pumpkin train full force!
